Chocolate Cake

Ingredients:

1 1/4 cup flour

1 cup white sugar

1/3 cup cocoa powder

1 teaspoon coffee (1 tablespoon if you like coffee taste)

1 teaspoon baking soda

1/2 teaspoon salt (I prefer pink Himalayan)

1 cup water

1/3 cup oil (I prefer Glorious Belize COCONUT oil because the flavor compliments everything so well)

1 teaspoon apple cider vinegar


Instructions: Put oven to preheat at 350 degrees F.

1. Add coffee and water to a small pot and let boil around 3-4 minutes then turn off and leave to rest until it cools down.

2. In a large bowl, sift flour, white sugar, cocoa powder, baking soda and salt.

3. In another bowl, add oil, apple cider vinegar and the coffee and water from the pot. Now slowly add to dry ingredients and properly mix well but don't over mix.

4. Line your baking pan with some shortening and sprinkle some flour to properly coat the pan. Gently pour cake batter in pan and carefully place in preheated oven. Bake for 25-30 minutes.

To check if cake is ready, use a tooth pick or knife and poke holes in the cake. They should come out clean.


Chocolate Glaze (Optional but recommended)


Ingredients:

2 tablespoon cocoa powder (I've honestly fallen in love with our locally sold cocoa powders. In this recipe I used MOHO Chocolate.)

2 tablespoon coconut oil ( I prefer to use Glorious Belize because of the flavor it adds)

1 table spoon non- dairy milk (You can use Lala if preferred)

1/4 cup powdered sugar

1 teaspoon vanilla essence

pinch of salt (I prefer pink Himalayan)


Instructions:

1. Combine all ingredients of glaze in a saucepan. Put the pan on the stove and let cook for around 2-3 minutes, stirring continuously till it becomes smooth. Switch off the stove and continue stirring for another 1-2 minutes.

2. Pour over the cake and create a nice chocolate coating on the cake with a knife or spatula. Let the glaze set and enjoy one of the easiest chocolate cake recipes!
